How to make a New Years Appetizer Meat and Cheese Board
There are two secrets to a great New Year's Eve party. First, invite enough people to really fill the room, so everyone has no choice but to mingle. And second, make sure all those people have plenty of great snacks to munch on.
Here's a sample New Years Appetizer Meat and Cheese Board I put together with a variety of tasty bites: hot and cold, light and hearty, savory and a little bit of sweet. Although most of these snacks look fancy, they really aren't that hard to make. The only ones that involve any actual cooking are the Honey Garlic Meatballs, which you can whip up ahead of time in the Crockpot, and the Bacon Wrapped Asparagus.
What makes the cold snacks look festive is presentation. The Roast Beef Canape is just deli roast beef on baguette slices with cream cheese, but adding chives on top makes them look like a fancy delicacy. Likewise, wrapping melon chunks in prosciutto creates a nice contrast between salty and sweet. Even little touches like transferring the cocktail sauce that comes with your shrimp ring into a little glass dish make it seem like you really made an effort.
Fill out your tray with sliced cheese and crackers, olives, nuts, and squares of good chocolate. Then pop open a couple of bottles of bubbly, and you and your guests can ring in the New Year in style.

How do you make the Bacon Wrapped Asparagus?
It's super easy and very similar to my Prosciutto Wrapped Asparagus. But you use bacon instead Twist a bacon strip around each asparagus spear without overlapping, leaving small gaps to let the green vegetable show through. This makes a cool design and also allows for airflow, so the bacon crisps up evenly. Bake at 400 for 8 minutes, then flip the asparagus and go another 8 minutes. If you want it a bit crisper, you can put it under the broiler on low, but only for 2 minutes. Any longer and it will go from crisp to burnt.
What kind of cream cheese did you use on your Roast Beef Canapes?
I used an onion and chive cream cheese and then added minced garlic and salt and pepper to it. Spread this onto baguette slices that you've warmed up in the oven, then cut your roast beef and fold it on top of the bread. Top with a fresh piece of chive.
How much of this tray can be prepared ahead of time?
Quite a bit. I cooked my meatballs the night before and prepared the cream cheese spread for the roast beef. I also wrapped my asparagus spears in bacon the night before, but I waited until the day of to bake them, so they wouldn't get soggy. But I was able to combine tasks by wrapping the melon in prosciutto while the asparagus was baking. I also saved time by buying a party sample tray of already sliced cheese, so all I had to do was lay it out on the board. The whole thing took me about half an hour to prepare, including cooking the asparagus.
How many people will this tray serve?
I would say this is enough for six to eight. If you have more guests than that, you can put out multiple trays with the same goodies on each one.
